Aioli

Serves: 2-4
Ingredients
- 1 egg yolk
- 1⁄2-1 cup extra virgin olive oil
- 1 -2 garlic clove, minced
- salt and pepper
Directions
- In a mortar, mash the yolk and garlic with the pestle until creamy.
- Slowly add olive oil while mashing/stirring, until desired constancy/flavor.
- Salt and pepper to taste--careful!
- It only takes a very small amount of each.
- Just a couple shakes.
