Agurksalat: Scandanavian Cucumber Salad (Vegan)

Agurksalat, or known in English as cucumber salad, is served in all Scandanavian countries. This little salad is easy and inexpensive to prepare. The key is slicing the cucumber paper-thin, my Norwegian cookbook recommends a Norwegian cheese slicer, I recommend a good knife and some patience. :) Show more

  1. Slice the cucumber paper-thin.
  2. Mix the vinegar, salt, sugar, dill, and pepper in a small bowl then pour over the cucumber slices, dispersing well.
  3. Sprinkle with the fresh parsley before serving.
