After-The Holidays Turkey Soup

This is an easy, flavorful way to use up turkey left-overs. The soup is light, but delicious.

Directions

  1. Put all the ingredients except the salt and pepper in a large pot.
  2. Bring to a boil over medium heat.
  3. Reduce the heat and simmer gently for about 1 hour.
  4. Remove the turkey carcass and pick off any meat attached to it, adding the meat to the pot.
  5. Season the soup to taste with salt and pepper and serve.
