African Rice Dinner

Ingredients
- 1 cup brown rice
- 1 1⁄2 cups cucumbers, chopped
- 1 medium banana
- 1 tablespoon mashed sweet potato
- 1 tablespoon sweet pepper, chopped
- 14 3⁄4 ounces Del Monte Savory Sides Santa Fe Corn
- 3⁄4 cup tomatoes, chopped
- 1⁄4 cup onion, chopped
- 8 ounces tuna steaks (I used albacore ginger & soy flavor)
- 2 tablespoons peanut butter
- 5 drops Tabasco sauce
- 1 teaspoon chili powder
- 1 teaspoon season salt (sylvia's soulful)
- 2 cups water
Directions
- Combine all ingredients in large 3 qt pan.
- cook on medium heat for 1 hour, until rice is cooked, add more water as needed.
- serve.
