Adele's Sumptuous Carrot Cake

One slice is worth a thousand words! This is an amazingly moist carrot cake which I first tasted over 20 yrs. ago at a cousin's home. She served this luscious cake and I didn't leave without the recipe. Try it ... I think you'll definately agree with me...it's the BEST!

Ingredients

• 3  cups flour
• 2  cups sugar
• 4  eggs
• 1  cup  corn oil
• 3  cups  finely grated carrots
• 1  cup walnuts (chopped)
• 1  cup raisins
• 2  teaspoons baking powder
• 2  teaspoons baking soda
• 2  teaspoons vanilla
• 1  teaspoon nutmeg
• 1⁄2 teaspoon salt
• 2  teaspoons cinnamon

• cream cheese frosting

• 1 (8 ounce) package cream cheese (room temperature)
• 1⁄2 cup powdered sugar
• 1⁄2 teaspoon vanilla

Directions

1. Sift and mix all dry ingredients.
2. Add all wet ingredients.
3. Pour batter into well-greased tube pan (4 inches high x 9 1/2 inches diameter, smaller can be used it just turns out higher).
4. Bake in 350 degree oven for approximately 1-1/4 hours or until cake tester comes out clean.
5. Cool and spread on cream cheese icing.
