Adam's Chicken

This recipe is actually my son's recipe. His twin brother provided the name during one of my visits. His comment on dinner was "We're having Adam's Chicken". Show more

  1. Pound chicken flat - 1/4 inch or so. Mix the egg and milk together.
  2. Coat the chicken in flour, the egg&milk mixture, and the parmesan cheese in that order.
  3. Fry the coated chicken over medium heat using just a small amount of oil. The goal is to sear the cheese to the chicken rather than cook the chicken.
  4. Place the chicken into a 350 degree pre-heated oven for 15-20 minutes.
  5. While that is cooking, mix the cornstarch with enough water to make a thin paste. Heat the evaporated milk, butter, salt&pepper, parmesan cheese, cornstarch paste, and basil together bringing to a boil for one minute. The sauce should be heavy like a very thick gravy.
  6. Serve the chicken covered in sauce to taste.
