Adam's Chicken

Ingredients
Chicken
- 2 eggs
- 1⁄4-1⁄2 cup milk
- flour
- parmesan cheese
- 4 -6 boneless skinless chicken breasts
- olive oil
Sauce
- 1 (12 ounce) can evaporated milk
- 1 tablespoon cornstarch
- 1 tablespoon butter
- salt & pepper
- parmesan cheese
- 1 teaspoon basil, fresh is best
Directions
- Pound chicken flat - 1/4 inch or so. Mix the egg and milk together.
- Coat the chicken in flour, the egg&milk mixture, and the parmesan cheese in that order.
- Fry the coated chicken over medium heat using just a small amount of oil. The goal is to sear the cheese to the chicken rather than cook the chicken.
- Place the chicken into a 350 degree pre-heated oven for 15-20 minutes.
- While that is cooking, mix the cornstarch with enough water to make a thin paste. Heat the evaporated milk, butter, salt&pepper, parmesan cheese, cornstarch paste, and basil together bringing to a boil for one minute. The sauce should be heavy like a very thick gravy.
- Serve the chicken covered in sauce to taste.
