Acorn Squash Soup

Ingredients
- 1⁄2 onion, diced
- 2 acorn squash, cut in half and roasted in oven
- 6 cups chicken stock (or vegetable)
- 1 teaspoon garlic, minced
- 1 teaspoon cumin
- 2 cardamom pods
- 1 cup heavy cream
- salt and pepper
Directions
- Sauté onion and garlic in olive oil. Add squash, cumin and cardamom.
- You can use your immersion blender to make it smooth or leave it more rustic at this point.
- Add stock, stir to combine and simmer for one hour.
