9 Bean Soup

This is from the New Orleans School of Cooking, So good!

Serves: 8-10

Ingredients

  • 1  large ham bone
  • 1  small onion, Chopped
  • 1 (1 1/2lb) can chopped tomatoes
  • 3  cups milk
  • 16  ounces  beans (red, black, pinto, blackeye, great northern lentil, baby lima, large lima, and split pea)
  • 1 12 quarts water

Directions

  1. Bring water to boil.
  2. Add ham bone and bean mix.
  3. Bring to a boil and reduce heat, simmer covered for 2-1/2 hours.
  4. Take out ham, remove bone, chop, and add back into soup.
  5. Add onion and tomatoes, with juice.
  6. Simmer covered 1 hour.
  7. add 3 cups milk.
  8. heat through and serve.
