  1. Place chicken in bottom of a large non-stick stockpot and heat at medium-high temperature to sear, flipping breasts over as they whiten.
  2. Add enough water to just cover the chicken.
  3. Add seasonings and bring to a boil.
  4. Let boil rapidly for a minute or so, then reduce heat and let simmer for at least an hour; two hours is even better.
  5. Remove chicken from pot (remove the bones, if necessary).
