6 Points Plus - Fetuccine With Gorgonzola and Toasted Walnuts

Ingredients
- 0.5 (16 ounce) box fettuccine pasta
- 1⁄4 cup milk, 1% low fat
- 1⁄2 cup ricotta cheese, fat free
- 1⁄4 cup gorgonzola, crumbled
- 1⁄4 cup walnuts, toasted, coarsely chopped
- 2 tablespoons flat leaf parsley, chopped
- 1 strip lemon zest, thinly sliced on diagonal (3 inch long)
Directions
- Cook fettucine according to package directions, omitting salt.
- Drain noodles, keep warm.
- Heat milk in microwave on high until warm, about 30 seconds.
- Combine ricotta and gorgonzola in medium bowl.
- Stir in warm milk until almost smooth. Some of the gorgonzola should be slightly lumpy.
- Spoon cheese sauce over noodles and toss well.
- Sprinkle with walnuts, parsley, and lemon zest.
- 6 Points Plus yeilds 2/3 cup.
