5-Cheese Mac and Cheese!!!

Ingredients
- 5 -6 slices bacon
- olive oil
- 4 cups cavatappi pasta or 4 cups elbow macaroni
- 1 teaspoon kosher salt
- fresh ground black pepper
- nutmeg
- 3 cups milk (2% or higher)
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 6 ounces gruyere cheese, grated
- 5 ounces muenster cheese, grated
- 2 ounces parmigiano-reggiano cheese, grated
- 6 ounces extra-sharp cheddar cheese, grated
- 1 ounce blue cheese (something like Noble Blue)
- 2 slices white bread (or an English Muffin top and bottom)
- hand-full fresh basil leaf
Directions
- Baking the bacon a rack on top of a sheet pan for about 20mins at 400°F Put the bacon on a plate lined with paper towels and crumble when it is cool.
- In a large pot of boiling salted water, add a drizzle of olive oil to the water. Cook the pasta according to the boxes directions. Drain well.
- heat the milk in a small saucepan, but don't boil it. In a medium size saucepan, melt the butter and prepare a rue with the flour. Whisk in the hot/warm milk and cook for 1 minute or 2 (until thick and smooth). Off the heat, add all the cheese, 1 tsp salt, some pepper, and a dash nutmeg. Stir in the pasta and bacon.
- Pour the pasta and cheese mixture into a baking dish (13” x 9” x 2”). Put the bread slices and basil in a food processor and pulse until there are crumbs. Sprinkle the bread crumb mixture over the top of the pasta. Bake for 35 to 40 minutes at 400° F (or until the sauce is bubbly and the pasta is browned on the top).
