2 Pepper and Onion Quiche Muffins

Just something I wanted to see the nutrition info for.

Serves: 6

Yields: 6 muffins

Ingredients

  • 4  large eggs
  • 34 cup  pasteurized liquid egg-whites
  • 23 cup  red pepper, chopped
  • 23 cup green pepper, chopped
  • 23 cup onion, chopped

Directions

  1. Preheat oven to 375.
  2. Spray muffin pan with nonstick spray.
  3. Pour egg whites and eggs into a bowl and mix together.
  4. Saute onions and peppers in water until tender crisp.
  5. Add peppers and onions to bowl with eggs and mix.
  6. Pour mixture into muffin tins and place in oven for about 20 minutes or until a fork inserted into the middle of a quich comes out clean.
