2-Minute Peanut Brittle

This is a recipe I got a couple years back from Sandra Lee on Food Network. I use it every year and we love it. I use a 1000 watt microwave--if yours is slower or faster, adjust time. Show more

Serves: 24

Yields: 1 pound

Ingredients

  • 24  individually wraped  caramels (unwrapped)
  • 1  cup  dry roasted peanuts

Directions

  1. In microwave safe bowl, microwave about 2 minutes or till caramels are melted.
  2. Stir till smooth
  3. Fold in nuts.
  4. Pour on a sprayed cookie sheet and with back of spoon spread as thin as possible.
  5. Cool; break into pieces.
