2 Corn Casserole

Ingredients
- 1⁄2 cup margarine (approx 1 stick)
- 3⁄4 cup chopped green pepper
- 1⁄3 cup onion
- 3 eggs
- 17 ounces whole kernel sweet corn, with liquid
- 17 ounces cream-style corn
- 8 1⁄2 ounces corn muffin mix
- 1 cup shredded cheddar cheese
Directions
- Pre-heat the oven to 350°F.
- Saute green peppers and onions in margarine.
- Combine the all ingrediants EXCEPT for the cheese and mix well.
- Pour into a greased two quart casserole dish.
- sprinkle with cheese and bake for 45-55 minutes.
- let sit for 5 minutes before serving.
