12 Thumbs up Banana Bread

So says my granddaughter. This is my daughter's recipe and I have to agree it is pretty wonderful. I found it written on a piece of paper and have snitched it to record here to make sure it doesn't get lost. This one is a keeper! Best to make two loaves because one won't last long out of the oven.   1. oil bottom only of 9x5 loaf pan with coconut oil.
  2. preheat oven 350.
  3. in first bowl combine sugar & butter.
  4. place eggs and half and half into a small jar and shake to break up eggs.
  5. pour over and stir into sugar/butter mixture
  6. add bananas.
  7. in second bowl combine flour, baking soda and salt.
  8. gradually add flour mixture to banana mixture stirring until just incorporated.
  9. pour into prepared loaf pan.
  10. poke jumbo raisins in rows across top.
  11. place in 350 oven on second rack for 75 minutes.
  12. at one hour mark, poke a butter knife down middle @ cracked area.
  13. the doughy part should only seem to be at the bottom.
  14. cover with foil and cook 15 more minutes or until timer goes off.
  15. meanwhile make the glaze by combining water, powder sugar and butter to a drizzle consistency.
  16. remove bread and run a butter knife around edge and jiggle to ensure it is loose in the pan (it should not stick to sides of pan).
  17. get a plate ready, cover top of loaf with oven mitt.
  18. dump top side down into oven mitt and place plate on bottom of loaf and turn over to plalce bread on plate.
  19. sprinkle top of bread with angel coconut and drizzle with glaze.
  20. serve warm and get a smiling 12 thumbs up rating at first bite!
