#1 Egg Batter

I was spending time with my sister in law this weekend so that I could learn more recipes from Central America (she is from El Salvador) She showed me a dry fish recipe that was dipped in this batter, the fish was lightly fried, and then cooked in salsa. Yields: 2 cups

Ingredients

  • 6  eggs (whites and yellows separated)
  • 3  tablespoons flour

Directions

  1. Place your egg whites in a large bowl and mix on high with a hand mixer for 15 minutes until triple the size and the consistency is pure fluff.
  2. Add the yellow parts of the eggs into the whites and beat with a hand mixer on high for 5 minutes.
  3. Add the flour and continue mixing on high for another 2 minutes.
  4. Note: Use the batter as soon as possible as it kind of acts like pancake batter and will not rise to the occasion if left untouched.
