Harvest season is April to June, though with cold storage these are available through Fall. Because of the higher sugar level of these onions, they bruise easily.
How to store
Keep sweet onions like Vidalias in a cool dry place separate from each other. Because of their high moisture content they will mold where they touch.
How to prepare
Vidalias are known for their sweet flavor and are often eaten raw as well as cooked, making them an excellent choice for salads.
