Mahi mahi
This fish is named the dolphin fish, but not to be confused with the mammal dolphin. This fish was renamed Mahi-Mahi by the Hawaiians so it would not be confused with the other dolphin. They can grow anywhere from 3-6 lbs, and have been known to grow as large as 5 feet and weigh up to 70 lbs. This fish is typically found in tropical and subtropical waters such as the Caribbean, Gulf Coast and Florida.
This type of fish is “fatty”, a firm fish with very flavorful flesh... Best served as a steak or a fillet. Fresh Mahi-Mahi is available all year round in Southern Coastal areas of the USA.

How to select
Supply is most plentiful from April to August, and with May being the best producing month. It is also available frozen all year round in most grocery stores; sold as fillets, with the skin being left on.
