Gelatinized starch
Gelatinized starch is often referred to as pre-gelled or water swelling starch. A starch base is heated to its gelatinized temperature then dried on a drum drier then its ground into powder. When water is added it is thinner than other gels. Pre-gelatinized starch is how puddings are made. Once the milk is added the starch has a thick consistency.
