Bea's Swiss Chalet Style Rotisserie Chicken Marinade

"I have been playing with this spice combination for a while now and I think I have it as close as I'm going to get it to the famous Canadian ''Swiss Chalet'' rotisserie chicken. I hope you all enjoy it :) I serve this with my Recipe #415025 Where I have listed instant tomato soup mix, I use the lipton tomato cup-a-soup mix, I tried entering this in the ingredients and it would not accept it that way. If you cannot find this you can use same amount ketchup as a substitute. This recipe is enough to marinade two 2.5 lbs chickens or one 5 lb chicken."

  • Mix all ingredients together in plastic bag. Poke holes into a whole chicken. Place chicken in bag and let marinade at least 6 hours or overnight.
  • Cook chicken in rotisserie oven at 350 degrees for 2 to 2 1/2 hours . Or cook with your prefered method.

  2. I gave this a try tonight and have to agree with most other reviewers, it didn't come out like Swiss Chalet at all to me. It seemed to smell like it while it was cooking so I was hopeful but I was disappointed in the taste once I served it. It was delicious but not like Swiss. That said, the drippings that collected under that got kind of gooey and almost overcooked tastes very much like the skin from Swiss. This led me to think the basting was done with the marinade? For example, my skin did not get the rich brown crusty bits that appear to be collecting on yours in the picture.

  1. I have never had Swiss Chalet chicken to compare, but this version is absolutely delicious! I cannot find the Cup a Soup here anymore, so with Pink's permission, I used 2 tsp. of tomato paste, with great results. I used my outdoor rotisserie. Great flavor and meat was very moist. (I used my injector and injected some of the marinade into the bird just before cooking). I also subbed onion powder for the onion salt.

This was so great on my rotisserie chicken, since I had a larger chicken I doubled amounts couldn't find tomato soup mix so I used dried tomato spice that I purchase in my bulk spice store, I omitted the allspice I may give it a try next time, I love this mix and will use it again, thank you for sharing Pinkie!
     
  3. This marinade made my chicken taste just like Swiss Chalet. The sauce in bottom of pan could have been thicken to make sauce. We loved it. Ps only marinated for an hour as i left it to late to do overnight
     
  4. I didn’t have time for marinading so I made this into a rub (just didn’t add the water). Rubbed it on some chicken thighs and cooked at 325 for about 45 minutes. Delicious!
     
  5. This is definitely NOT even remotely close to being Swiss Chalet Chicken. This has a lot of ingredients and takes a lot of effort. Why not just buy the Swiss Chalet dry dipping sauce packets and make as directed. Then baste your chicken while is is on the oven rotisserie?
