I love cooking and I love food. However, I am a partial vegetarian (the only meat I eat being seafood/fish) and I like to watch the fat intake. I also watch my carb intake as well. Many of my recipes are either vegetarian, lower in fat/calories, and/or low carb. I like taking classic recipes and making them veggie and/or waistline friendly. I love the challenge of coming up with tasty dishes that taste like the higher fat or meat versions. It's fun and rewarding when something turns out AWESOME or even better than the original.
