I have enjoyed cooking since I was young. I like trying recipes from different cultures and love to learn from experienced cooks. My favorite cookbook is Paul Prudhomme's "Louisiana Kitchen". My family has made his recipe: "Chicken Big Mamou on Pasta" our traditional Christmas dinner for the past ten years. You may want to reduce the hot spices by half unless you're taste buds are already gone.
