I work at a seafood restaurant in the Baltimore inner harbor. I don't have any professional training in cooking. But, I have been cooking on my own for over 5 years. I prefer to cook italian recipes, some of which are family recipes that I tweaked to todays likings. One pet peeve that I can think of is when my restaurant uses cumin in the majority of their soup de jours. I hate cumin, and if a recipe calls for it, I rarely put it in, unless it is chili. It is an awful thing to torture our recipes with.
