I live in the mid-west, have a degree in hospitality management but haven't used it recently. Favorite cookbook is local and church compilations, and Farm Recipes & Food Secrets from the NORSKE NOOK! My pet peeve is substitution cooking, low quality ingredients, or cooking something where the person didn't write the measurements correctly - what a waste of good food. My mottos - FAT IS FLAVOR, eat in moderation but don't cook skimpy, and substitute only when absolutely necessary.
