Raspberry Cheesecake Brownies

I was craving this combination and ended up using and tweaking two separate recipes to create this amazing dessert. I'm posting this after only having made it once. It tasted perfect, but the cooking temp and time may need adjustment (or use a larger pan for shallower brownies), as it took a long time for the center to cook through. -- posted by subaruthie

Men's Favorite Meatball Appetizers

So, So simple, delicious and addictive meatballs!!!

I took these to work often when I worked at our largest newspaper.
The aroma permeated all 5 floors, so many people (mostly men) from different departments stopped by to make sure they got some before they disappeared.

I used 5 lbs of frozen small meatballs and they were gone well before day's end.
(We also had tons of other goodies)

I make them for reunions, etc. and everyone loves them BUT...., men in particular loved them most.

I personally can't get enough of them and I'm a female!!! -- posted by Ragdoll Frankie

Apple Paste

This is one way to use up those almost past prime apples, but any apple will do. It isn’t necessary to cut the paste into cubes, but may be stored in a jar, such as a Mason Jar and scooped out. Also, it can be used in any recipe that calls for guava paste. Serve as an appetizer with cheese squares or cream cheese and crackers. May, also, be given as a gift or used in turnovers, empanadas, etc. Cook time is divided into two phases. -- posted by gailanng

Pickled Okra

Chef Steven Satterfield divulges his grandmother's recipes for a family specialty, pickled okra. When pickling your own produce, begin by sterilizing a clean 1-quart glass canning jar and lid in a pot of boiling water for 15 minutes. Use tongs to remove the lid and the jar, which should still be hot when filled with the okra. Published in Country Living magazine. I have tweeked just a touch. -- posted by Sharon123

Strawberry Vanilla Jam

This recipe is an adaptation/mash-up of the strawberry jam recipe in the book titled Well Preserved by Mary Anne Dragan and the strawberry vanilla jam recipe in the book titled Put 'Em Up! by Sherri Brooks Vinton that also includes my own additions! The butter is optional and will help tame the foaming but don't use more than 1/2 teaspoon as this may raise the pH too high making your finished product unsafe to can. The lemon juice should be bottled instead of fresh because bottled has a more reliable and consistent pH where as fresh can vary. This makes wonderful gifts that are a bit more special than just regular strawberry jam! I usually get 6 half pint jars and a quarter pint jar out of this recipe. -- posted by Chef #583577

I saw this on Trisha Yearwood's new cooking show, Trisha's Southern Kitchen, and wanted to try them mainly because they looked so simple and quick. They are yummy with a LOT of butter taste. I may try to cut back on the butter with my next batch. I think a little shredded cheese would be awesome in these too. She made it with her recipe for her Daddy's Brunswick Stew and I think this would be a nice biscuit to complement soup--or anything! Mmmm, mmmmm, good! -- posted by Queen Puff

Crispy Fish Sticks

After experimenting for a while, I came up with the closest recipe in creating the best fish-sticks every-one will love, including picky eaters. Leftover or old bread will also come to good use.

Notes:

You can marinate the fish with any other spices, if you like.
If you don't like tillapia, you can replace it with a similar 'white-meat' fish as cod.

For people who don't have enough time (or are lazy cooks), skipping the breadcrumbs episode and using instant store-bought breadcrumbs is also an option.

When tumbling the sticks in the breadcrumbs, it's better to have the plate filled with 'too much' crumbs to ensure a 'proper sealed crust' than having your dredged fish sticking to the bottom of the plate -not done!-. -- posted by foodieforlife2

Basque Salad

This probably is an interpretation of a Basque salad and not traditional-who knows? Normally I would use a 'bleu de Basque' cheese but the store was out of stock and I substituted Oregon made 'Smoky Bleu' cheese from Rogue Creamery. From taproduce.com via Pierre Bain at Fandango Restaurant. Dressing is from taproduce.com by way of Allrecipes. -- posted by Cookgirl
