A recipe from my favorite vegetarian cookbook, I make this with double the berries (often using mixed berries) and low to non-fat dairy products with a whole grain bread for a more health conscious dish. (This balances out my obsession and overuse of maple syrup!)
I've never had anything by rave reviews and recipe requests from this dish. Everyone is always in love with this new take on french toast. Top with some fresh maple syrup for lip-smacking yumminess!
These are yummy healthy chicken fingers with a little crunch. Came out of a fitness magazine. Instead of layering on spinach leaves, I threw on top an Asian salad with some ginger honey dressing. I'll definitely make again. My only issue was with the coconut-cornflake-cashew mixture. I didn't have enough to coat all the chicken, so had to make more. But that was easy enough.

Fresh blueberries on top of an almond-date crust. I haven't tried this recipe yet, from Self Magazine, but how can it not be a great summer treat - there's no baking! Although, the portions look awfully skimpy! I might consider this a cookie, not a full dessert.
A beautiful dish my mother has made often and it's always been a favorite. A cheesy spinach mixture rolled up in a cheese souffle, from the famous vegetarian Greens Restaurant in San Francisco. The recipe calls for ricotta, but I'm thinking unless you use fresh ricotta there won't be much flavor in the filling. So I plan on adding a few extra ingredients to give it some more umph. Like any ricotta and spinach mixture, it's easy to add onto!
A surprisingly tasting comforting soup, using white beans to create a creaminess instead of dairy. Less fat and added protein! Leave out the grilled cheese for a totally vegan meal, although I love the flavor the gruyere adds. I got the recipe from Fitness Magazine, and am surprised at how good it actually is (I don't have much culinary faith in these magazines!)
I found this recipe on a blog, and tried it for a meat-free alternative with homemade tomato sauce and spaghetti. I grew up eating a version made with tofu, and enjoy the flavor of these more. I'll definitely be making them again!
