    I found it in the local paper - it comes from Madame de Smet who makes it every day for her restaurant. DONT change a thing especially the amount of salt.

    SUMMER CHICKEN SALAD -- Serves 4 -- Cooking time 15- 20 mins A friend made this for lunch and it was so flavoursome I just had to have it. For Variatoin: can replace chicken with cooked prawns and the mango with peeled ripe peaches. If watching kilojoules, replace mayo with Greek style yoghurt and leave out the nuts.

    My friend, Karen, gave me this recipe. I think it could also work with chicken fillets. If when you are ready to eat, there is too much sauce, turn up the heat and boil some off. The sauce, when cooked down, makes a lovely caramel golden brown sauce on the fillets. Because the sauce is rich, I usually serve the meals with plain mashed potatoes and a fresh green vegetable.

    My friend Michael gave me this recipe and until I tried this I wasn't a big fan of cous cous. This changed my opinion. As an optional extra of you want to extend the volume of the salad, you can add a small amount of diced tomatoes as well.

    I am posting this recipe in memory of my dear friend, Dot, who died in 2008. Dot was a wonderful lady and matriarch of a large and fascinating family. She was also an avid and excellent cook. It didn't matter when you arrived at Dot's home, there was always some freshly made goodie for you to sample. These puffs were just one of her offerings.     My friend Stephen is a wonderful cook and I find all his recipes are tasty. This recipe is rather interesting as it is served at room temperature. The recipe is for one person. The time includes the 15 minutes "sitting" time. The best tomatoes are home grown but vine ripened are good also.

    My friend, Ginny, calls this her "Thai-soupie thingo" - it's another soup when you are hungry and pushed for time. You can use chicken which is already cooked, otherwise fry raw chicken breasts in the usual manner. The preparation time is based on chicken already cooked.
