Victoria Sponge, but as butterfly cupcakes! A lovely sponge, with jam and buttercream in the middle. Very popular.
Original Victoria cupcake recipe from Cupcake Heaven by Susannah Blake (Ryland, Peters & Small, London; 2008) but with adaptions and buttercream recipe by me.
These dark, bitter-chocolate cakes with a hint of coffee are delicious with a soft, squidgy crumb. They're so moreish that everyone will love them, whatever their diet.
Suitable for vegans, and for people on nut, egg and/or dairy-free diets.
Top with a chocolate frosting or icing to finish.

A basic buttercream recipe, with options of different flavourings.
This recipe doubled is supposedly sufficient to sandwich a 15-18cm (6-7inch) cake, but I have only used for cupcakes so far.
Butter could be used instead of margarine, but I think it tastes better with margarine.
