    Homemade Egg Beaters (For Egg Substitute)

    This is a little different than some of the ones on this site as it uses canola oil for a little extra boost in flavor. I have noticed that some of the egg substitutes are calculated wrong on the nutritional breakdown. (I think they calculated the egg whites as whole eggs). These work out to be about 30 calories per 1/4 c. and less than 1 gram of fat. 1/4 c. equals 1 egg; 1/2 c. equals 2 eggs and so on. This freezes well as long as there are no yolks! Old ice cube trays work well for this.

    Bierock Casserole

    Growing up in Kansas, I have enjoyed Bierocks (some call them Runzas) all my life. The yeasty Bierock (or Runza) sandwich have German-Russian roots that eventually made their way west to Nebraska and Kansas. You can find these sandwiches at county and state fairs, craft shows and just about any fund-raiser in Kansas most any time of the year. About 15 years ago a friend I worked with, gave me this recipe for a casserole instead of a sandwich. We love it almost as much as the real deal! Note: I use only name brand crescent rolls. The cheaper ones don't seem to work as well. Also the original recipe called for only 1 can of cream of mushroom soup. We personally like the soupier mixture but you can omit the second can if desired.

    No-Fat Banana Applesauce Muffins

    I got this recipe out of a Gooseberry Patch cookbook and it is one of my stand-by recipes when I am watching my calories and fat. Since I am doing just that right now, thought I would put it on the zaar for easy access and hopefully someone else likes this recipe as good as I do. (I prefer to sub 3/4 of the white flour for whole wheat and use brown sugar instead of granulated sugar. I think fresh nutmeg is the key in this!)

    This recipe originally came from a KitchenAid cookbook that came with the standard mixer around the late 1980's to early 1990's. It is so fast to make and so delicious. I have made mini pizzas with these after toasting them and piling on my favorite toppings and then running them under the broiler. Or just toasted in the morning with my coffee. This is one of my 'keepers'.

    I just recently bought a KitchenAid stand mixer and a Bialetti pizza baking stone. This recipe is a combination of the Crusty Pizza Dough in the KitchenAid manual and the Pizza Margherita recipe that came with my stone. (If you don't have a pizza stone you can use an inverted baking sheet.) Don't let the simplicity of the pizza sauce fool you....very tasty!

    Rachael Ray - Sourdough Croutons

    This recipe orginally came with Rachael's San Fran-Caesar Salad. Since I make my own croutons now, I think this is by far my favorite. I usually double or triple the recipe, adjusting the herbs and seasoning to taste. (I don't triple the black pepper but usually leave it at 1 teaspoon and use about 1 c. parmesan cheese.) I also use any kind of bread that I have available...even hotdog or hamburger buns.) Using herbs from my garden I will use fresh thyme, parsley, rosemary, red and sweet basil and chives, chopped fine (all together or whatever I have on hand.) I am typing her orginal recipe, so adjust to your own taste. My grandkids will eat these just as a snack...enjoy!

    Several years ago I lost a lot of weight and this recipe was one that I used quite often. I use a lot of seasoning in mine. One quarter of the pie is about 119 calories with only 2.2 grams of fat. (Or 9 Weight Watcher Pts. for the whole pie.) Very easy to make!

    We think this is awesome potato salad. A bottle of Garlic Expressions, runs about $4.oo, but it is sooo worth it. Use it as a marinade, salad dressing or just use your imagination. We find it in the deli section. I got this recipe off of their website. I think it is important to make it exactly as it says for that unique taste.

    I got this recipe from an old cookbook from 1952. I love harvard beets and this is my favorite beet recipe. It is fast and easy to make. In the winter time you can use a can of diced beets, if you don't have fresh available. Also sometimes I just cook the beets whole, then dice or slice them after "slipping" them in cold water. Slipping beets is a good childhood memory that me and my little sister used to share together.
