    Traditional Norwegian Fish Cakes!! This recipe has been top secret for years, but it's time to share it! If made correctly, these are light and fluffy. I have tried many Fish Cake recipes, but this is my favorite. It is time consuming, but well worth the effort. Note: For the fish, I usually use all salmon, or 2 cups salmon and 1 cup halibut. You can use whatever variation you want. Just use good quality fish. If the fish is bad before you start, please don't blame me for a bad recipe. :)

    We eat a lot of salmon in our household as my father is a commercial fisherman in Alaska. I prepare salmon numerous ways, but this is always my favorite way to make salmon when I have company. Even people who say, "I don't care for fish, I'll have a small piece," usually end up having heaping seconds. Enjoy and PLEASE DON’T USE Farmed Fish for this recipe aka...Atlantic salmon. It’s bad for you and it doesn’t taste nearly as good.

    I have made this as a main course for many dinner parties, and I always get great reviews, even from kids! Don't let the amount of ingredients scare you away! It is really a dump in and let sit style soup. If you are a vegetarian, simply omit sausage, up the fresh spinach, and use vegetable broth instead of beef broth. My vegetarian friends love it! This recipe came from my dear Great Aunt Frankie, with a few additions of my own. This soup is wonderful served with crunchy bread.
