Lighter version of a favorite, easy to put together. Asadero cheese is readily available here in Arizona, but if you can't find it substitute asiago or a similar cheese. You can also use already prepared salsa verde for quicker prep time. I used leftover meat from store bought rotisserie chicken
This recipe originally from Cooking Light. I don't use taco seasoning, just a mix of my own to make it spicier, and to control salt content. I like to use dried chipotle powder in the rub, and add a chopped canned chipotle in sauce to the meat before cooking. Leftover canned chipotles in sauce freeze well, put 1 or 2 chiles to a baggie to use in chiles, mexican recipes etc. This recipe also good with black beans instead of refried.
low cal soup that can be done in the crockpot or stove top. I don't find this a really spicy soup, I like to add chipotle chile or hot sauce, also usually add cilantro. Have also added additional veggies such as zucchini and even added rice before. Easy to make vegetarian by leaving out the chicken and using veggie broth. Very good with crumbled baked tortilla chips and low fat sour cream to top
I got this recipe out of cooking light magazine about 4 years ago. Super fast meal for when you're too tired to spend much time cooking. I skip the step with the 10 cups of water. I normally use a prepacked container of fresh baby spinach and zap it in the micro for a few minutes.
I like to have some texture and color left in my greens.
This is a Rachel Ray recipe I had in my file for quite awhile, and had to try it recently to satisfy a craving. It turned out really well. I used made from scratch biscuit recipe as I couldn't locate the jiffy mix in my area, I made about 6 biscuits. Also, I think the refrigerated biscuits would work as well. Otherwise I followed the recipe pretty much exactly.
Found this while searching for another recipe at cooks.com, The name caught my eye, although I have no idea what the origin is. I have some leftover chicken I need to use up and all the other ingredients on hand so will be trying this for supper tomorrow night.
