    It's so difficult to find dairy free muffins so I decided to make my own. This recipe will make either 12 full sized muffins or 34 tiny ones.

    This soup is great for a cold evening, a wonderful comfort food that is so very filling and so very tasty. It’s much like the Pasta Fugioli soup that is served at the Olive Garden, except for the farmer’s sausage and parsnips which I personally like even better.

    I've tried to find prepared Gnocchi made without dairy products but couldn't find any. I ended up coming up with my own recipe and I think it ended up turning out great. The Gnocchi cooked up perfectly, very lite and surprisingly tasted cheesy. It's a fair bit of work but the final product was worth the effort. We served ours with Primo Spaghetti Sauce.

    Now Eggs Benedict is still a possibility for those unable to have dairy. I used to use the Knorr package of Hollandaise Sauce but unfortunately it has dairy in it, so decided to come up with my own version. I think the taste is quite similar, and it makes more than enough sauce for two servings of Eggs Benedict. Also would be so good to serve with fish or on vegetables.

    Because of a dairy allergy, ordering lasagna at a restaurant soon became a thing of the past. The craving was still there so I created my own version.     This is actually a pumpkin pie recipe that has been passed down over several generations. I love pumpkin pie but not the calories so omitted the pie crust, adjusted the type of milk used, and replaced the sugar for splenda. If you don't mind the extra calories just use heavy cream, and use 2/3 cup sugar instead of the splenda. I hope you enjoy this.
