My roommate made this the other day from her Cooking Light magazine, and I absolutely had to snag the recipe for myself because I loved it! She is vegetarian, so she omitted the chicken and I believe she put some already cooked lentils in the dish for extra protein. (Vegetarian option). Thanks to the spices in this dish there are beautiful flavors and this is quite filling :]

This is just one of their delicious recipes that I know I will be making for years! We had the cranberry scones, so I would substitute cranberries for the raisins in this recipe. The scones were also served with a delicious orange butter. This recipe results in a soft, not-too-sweet scone that absolutely melts in your mouth.
I remember course sugar being on top of these scones, which is not mentioned in the recipe. If desired, I would sprinkle enough to taste on the dough before baking.

For the bell pepper, I like using yellow or orange to add great color, but you can use whatever you like. As for the feta cheese, you can purchase crumbled or block; however, I like using block cheese, breaking it down, and upon mixing, it crumbles down perfectly.
