    Red Chili and Lime Chicken

    I devised this recipe one day while trying to think up a brilliant idea for lunch. We had leftover salad in the fridge, and I wanted to put chicken on it. Since I had some time on my hands however, I decided to be creative with the chicken, and this is the product! It's delicious on salad, and is quite versatile; add it to soup, noodle dishes, sandwhiches, wraps, etc. Note: I wrote the recipe based on what I made and what I ate. Basically, one chicken breast per person. This quite likely will be adjusted, however, based on the how you're serving it.

    Gluten-Free Blueberry Pudding

    This is a truly delicious dessert - especially for those of us celiac's watching everyone else eat their blueberry pie. :) This recipe is the same as Angela TN's "Blueberry Pudding", but a GF version. Not too hard to change, but I thought I would post it anyways. I used Schar gluten-free flour. Your average GF flour mix should work well - it doesn't require any rising agents. Also can be made lactose-free if you use vegan margarine and soy milk - which do work well (what I used). I did not have lemon rind on hand, so I used a bit of the juice and it was great! I also used white sugar in place of brown. Not a "too sweet" dessert either, which is good!

    Greek/Mediterranean Pizza

    I came up with this lactose-free pizza, and in my opinion it tastes great - you could potentially use it as an appetizer, or as a meal itself. The texture is a bit different, so it might be better to think of it more as an appetizer than as pizza. I used the pizza dough recipe from 'Cheese Pizza' in the 'More with Less' cookbook. Servings/Yield is very dependent on how much dough you use, and how much you want to make. Adjust ingredients accordingly.

    This recipe is off of a Wilton 9x9x2" non stick cake pan. It is so good! It looks appetizing, and tastes delicious. We used a 9x9x2" pan, but you could probably use other sizes. Just watch cooking time!
