This comes from a oamc book called "Fix, Freeze, Feast" and is really delicious! Its one of my favorite Thai type dishes and I usually serve it on top of fresh spinach leaves (for me) and on steamed rice (for DH & kiddos) . This is meant as a OAMC dish so it uses a large package of chicken such as you would purchase at a warehouse store. This makes 3 entrees and each entree serves 4-6 people.
This is one of my daughter's favorite meals. We use chicken, the original recipe called for pork shoulder. This freezes very well. For an even quicker dinner, precook and freeze the rice in a separate baggie. If making and serving on the same night. Allow 45 minutes for the meat to marinate.
From "The Best Freezer Cookbook". This is a very simple soup. My kids actually prefer it with no carrots or peas. Just chicken and noodles. I find the noodles I use in the kosher section of my supermarket.
This comes from The Best Freezer Cookbook. I like this with the fire roasted tomatoes. I think the brand I used was Muir Glen. Also, don't leave off the basil cream, it adds a little something extra that is really nice. I also just used my immersion blender to blend this right in the pot. Enjoy!
The original recipe for this came from Joan Lunden's Healthy Cooking. I've changed a couple things to our tastes. This is a very moist, delicious meat loaf. Its my favorite. I leave the topping off as my family doesn't care for it.
This recipe comes from the cookbook "Don't Panic - Dinner's in the Freezer" . It is really delicious. Good with crusty bread and a green salad. I must admit to using the pre-cooked bacon crumbles (about 1/2 cup) instead of cooking and crumbling the bacon. Sometimes it is just easier! Make sure it is real bacon though, not the imitation bacon bits! Enjoy.
Another recipe from "Pacific Fresh". These are really delicious potatoes. I am listing the butter amount as the recipe states, however I have made this using 1/4 cup butter instead of 1/2 and it turns out fine.
This comes from the book "Pacific Fresh". It is one of my favorite cookbooks. These are a great little appetizer, especially for a mexican meal. Something a little different than chips and salsa. I ate some of the leftovers with a salad for lunch the next day - yummy!
This is my own little creation. I had a recipe for Italian roll ups that I got from a once a month cookbook. I just changed it to taco style as my children love anything with a Mexican flavor. These freeze well. I use my own homemade whole wheat bread instead of the frozen bread dough.
