    This is the way I make my chicken nuggets. My kids love these and I try to keep some on hand in the freezer for quick snacks and meals. The technique came from the 30 day gourmet cookbook. This is an estimate on the crumbs. I normally do a whole bunch of chicken at once and just kind of eyeball the amounts.

    This is a great way to make a quick treat. This dough freezes very well. I find these don't work as well for cut out cookies. The dough is pretty soft. This came from a 30 day gourmet ebook. Cooking time is per sheet.

    This is a different white pizza. It is very tasty. Don't do what I did the first time I made it. I pulled it from the freezer and plopped it on the oven rack forgetting I hadn't pre baked the crust. Needless to say, I had a huge mess in the oven! This comes from one of Holly Clegg's books.

    This is my kids favorite homemade version of mac and cheese. It does contain canned soup. If you're not a fan - don't try it! This freezes and reheats really well. I usually double this on a cooking day and it fills my 6 quart crock pot to the brim.

    This is one of my daughter's favorite meals. We use chicken, the original recipe called for pork shoulder. This freezes very well. For an even quicker dinner, precook and freeze the rice in a separate baggie. If making and serving on the same night. Allow 45 minutes for the meat to marinate.

    These burgers are very good. The salsa gives them a nice flavor. I like to serve them on whole wheat buns with avocado, lettuce and tomato. Pepper jack cheese is good on them as well. I make these up ahead of time and keep in the freezer for a quick meal. I can only find ground turkey in 1.25 lb. packages. This works fine for this recipe.

    This is a delicious summer salad that was in our local paper food section this week. They give credit to Williams-Sonoma Food Made Fast: Salad. Regardless, it is delicious! I used homemade pesto and only added half the baby spinach as it was plenty. I would probably cut the spinach into ribbons next time as it was a little awkward eating the whole leaves.

    From Simmer or Sizzle. This dip is not quite as creamy as what you'd get at a mexican restaurant, but the flavor is really good for such simple ingredients. I used low-fat cream cheese as it was very good.
