One of my favorite summer desserts to make. Light and refreshing with just the right amount of tartness. The pie freezes very well. Occasionally I'll make my own crust using pretzels to give it that saltiness that is traditional in Margaritas.
From July 1999 Bon Apetit - This salad is so good. I like to add grilled chicken to give it some protein and make it a meal. The salad dressing is a winner too! I like to keep a batch on hand to dip veggies in.
This recipe has a mere 4 ingredients but it's one of my favorites. Incredibly easy, very buget friendly, cooks on the fly and tastes really really good both fresh and reheated. Excellent with some mashed potatoes to round out the meal.
