After reading about mushy baked sweet potato fries, I had to throw this on here. It may not be as healthy as baking them, but so good! I try to slice them very thin to make them crispy like potato chips. They will become a darker brown, but my kids always pick these out first. If they are slightly thick, you still get a crisp edge , but the middle will be soft. I Like to slice up some yellow or blue potatoes with it too for variety and color.
