A healthier, yet still delicious, variation to the fat and sugar loaded typical pie. This pie freezes well, and the longer it's left in the fridge before eating, the softer and better the crust tastes. I used extra coconut and banana chips to decorate the pie. I think the package of tofu was around 13 oz...I used the lite version. Cooking time is refrigeration time.
90 yr. old grandpa is coming for a visit. Since cookies are a part of his daily diet, I'm going to attempt to make him healthier versions. I looked through a dozen recipes on this site for molasses cookies and then came up with my own that fit what ingredients I had while still maintaining a healthier approach to cookies.
I love chocolate, and I love being healthy and fit. So i've come up with a compromise- a delicious chocolate puffed wheat square reduced in sugar and fat. I've made this recipe with 2 oz. of 72% cocoa chocolate and 6 squares of Lindt 99% cocoa chocolate... but i'm sure you could play around with different chocolate bars to get a preferred chocolate taste.
