Got tired of same old pot roast so decided to spice things up a bit. Decided to try parsnips and rutabaga instead of potatoes. Yummy!! Even my husband liked it and he is a fuss pot. The meat will melt in your mouth.
This can be made using diced chicken, thinly sliced beef or diced pork. The meat you use can be leftovers. I specifically use the Asparagus Stir Fry because it doesn't contain water chestnuts as my husband doesn't like them.
This was my mother's (Clara) recipe. I have no idea where she got it but this was a staple at our house for years. All of us children (5) have tried to make this recipe taste like hers. We can come close but it never tastes as good as when she made it. Maybe it was the love. She died at the age of 86 and I'm posting this recipe in her memory.
This recipe came from a Time-Life recipe book and originally called for veal; however, since veal is so expensive and difficult to come by, I use pork with the same very tasty results. I like to serve this with crusty French bread and a green salad.
