    This is a real twist on a traditional enchilada and is anything but budget. I only made these for special occasions as a result. Note that there is no cheese, red or green sauce. It’s yet another from my “scrap of paper” cookbook. lol This is a “recreation” of one I had in a restaurant years ago in California so at least I know where this one came from. lol The following is as close as I can come from my little “notes”. As always, if you make them, adjust to your taste and suggestions/comments/critique that might help others decide whether or not to try these is greatly appreciated. My suggestion: I did try using imitation crabmeat. One time. It was NOT the same in this recipe in either taste or texture. These are designed to take up the entire plate and “be” the meal but by all means if you’d like to divide them between 4 persons and serve with rice and beans use smaller flour tortillas and adjust the garnishes as desired. Note that the cooking time includes the "infusion" time. Here’s hoping I deciphered my notes right!

    I have not made this yet. Posting here for safekeeping as I lost the recipe once. Servings and times are a "guestimate". The only thing I remember about this recipe is that I gave it to a friend a few years ago who wanted to make an anniversary dinner for herself and her husband and they both raved about it. I'm not sure whether or not it was more from the flavor or the fact that she'd successfully cooked a meal that they both enjoyed. ***insert blowing raspberries smilie here in case she ever sees this***. LOL I don't see it on Zaar so I'm going to go ahead and make it public.

    This is a recipe I brought with me from California many moons ago. It’s more cake-like than some cornbreads and may not appeal to everyone, but my children milled it and weren’t exactly all that tolerant of other recipes I’d tried. Prep time includes making the Honey Butter and are farily accurate erring on the conservative side.

    Posting here for “Annie”. I don’t use anything but Hot breakfast sausage, (Jimmy Dean’s but I’m sure there are others out there), for the Sausage Gravy. Great flavor, just enough heat and the kids (even the big one) milled it. LOL. Note: Prep time does not include making the biscuits.

    I added 1/2 cup diced tomatoes to the spinach mixture once as I had one that needed to be used and included it in this dish taking a chance. We've done it ever since when a tomato needed to be used but it is optional.

    Posting here so that I don't lose it again. :o I made these years ago when the kids were younger but I can't remember what the yield was, where I got the recipe or whose recipe it was. I'm going to make them again later in the week. I'll get the correct prep time info and yield then but memory fails me now. :o . Perhaps someone out there in Zaar knows who should get the credit for this recipe and wouldn't mind posting that information? It would be much appreciated.
