    This traditional Greek dish is similar to falafel, but with less spice and flavored with cheese and is usually served as an appetizer. They are very easy to make with dry chickpeas, but canned may be substituted. Use a cheese grater to mash the tomato. Servings are approximate. Time needed for soaking the chickpeas not included.     These skewers are healthy and low-fat, but full of flavor. ***NOTE*** For the sauce, the main ingredient is jocoque, but Zaar wont recognize it, so I had to put cultured buttermilk instead. Jocoque is a thin, yogurt-like cultured milk product, similar in taste to cultured buttermilk. It is a Mexican product with Lebanese origins, with hardly any variations between the one used in Lebanon. Cultured buttermilk may be used in it's place, but only use 1/4 cup and increase the yogurt to 1/2 cup. In the US it can be found in the Mexican dairy section in supermarkets.     I made this one when I had one mango and some coconut macaroon cookies to use up. It is light and refreshing, great for summer. Use a clear bowl for a pretty presentation. -Note- the cookies that I use for this are flat and crunchy. I use about 32 cookies. Cooking time is chilling time.

    This is a cake that I made to use up some leftover applesauce. It is low fat and has no oil or butter, it uses only one egg, and sugar-free sweetened condensed milk and applesauce and has the healthy addition of oats. It comes out so moist. It's great the next day for a breakfast treat.

    This is a slow cooker recipe. The beans in it can cooked up to 2 days in advance. It may be cooked for 6 1/2 to 7 1/2 hours on low or 5 1/2 to 6 1/2 on high. It takes quite a bit of preparation, so it's served for special occasions. From Sunset magazine, slightly modified. Posted for ZWT 5.
