This is a delicious tomato based rice dish, spicy pork sausage meat may be replaced for the ground beef which is what I prefer to use, make this as spicy as you like by adjusting the chili flakes, the olives may be omitted I strongly suggest to add them in you could substitute 3/4 cup frozen peas, this recipe was developed using converted rice I can't promise the same results using another kind of rice

Follow the steps for perfect whipped cream, do not use white granulated sugar it will cause the whipped cream to "weep" more use only confectioners sugar and make certain that you chill the glass or stainless steel bowl and beaters in the fridge for at least 1 hour or you can even leave them for 24 hours, no plastic bowls for this please! and leave your whipping cream in the coldest spot in your refrigerator or place in the freezer for 15 minutes

Plan ahead the patties need to chill for at least 6 hours or 24 hours, the longer the better ---1 pound should give you 6 small patties or 4 large I would suggest to make them small to reduce the cooking time, if you are are oven baking then go ahead and make 4 large ---this recipe may be doubled but keep the garlic to the same amount or increase only slightly, these may be browned in a skillet in oil then placed on a baking pan to finish cooking in the oven
