This is a very easy cake to make. The four main ingredients are used with equal quantities, which is why it is called Four Quarter cake. It can be made with either apples or pears or any flavouring you like (I tried it with coffee essence once and it was fab').
This is a recipe coming from Crete where people's longevity is the highest in the world! So it's good for you and it doesn't compromise on taste... The quantities given will be enough for 2 as a main dish or 4 as a side-dish.
This recipe is from a French recipe book and is quite healthy (apart from the cream sauce and the cheese, but you can use a low fat version). The original recipe uses "oseille" herb for the sauce but it is not easy to find, so I use the lemon juice as a replacement. These tomatoes are to die for and will also delight vegetarians (just omit the eggs).
