    This is Betty Crocker's chicken pot pie version with a couple minor adjustments. It's a great recipe! We gobble up this pie and frown a bit upon realizing the last slice is gone. Homemade crust sends this over the top...but use pre-made crusts if you'd like. Enjoy!

    This is from Betty Crocker's "Good and Easy Dinners" with my adaptation. Go mild or's up to you. This is good for when you don't have any meat defrosted for dinner but you want something hearty, pretty and kid-pleasing. (It qualifies also as pure comfort food - bonus!) For the crushed tortilla chips, try a combo of Doritos and plain Tostitos...Fritos are good, as well.

    Feel free to use this as a base and jump off at will with veggies and herbs. This is good for a little bit of zucchini, a little bit of fresh red pepper, a little leftover pasta in the bottom of the get the idea. Great with grilled chicken.

    From "What's for Dinner?" by Maryana Vollstedt. A combination of grains and pasta with subtle herb seasoning, slightly chewy. I was happy to find that my whole family loved this...even the 5 year old! Hooray! It's delicious.

    This comes from a Sunset cookbook compilation, in the section titled "Low Fat Italian." I made this when my wonderful vegetarian nephew came for dinner, and we all thought it was heavenly. It's a little bit like an oven-baked frittata. I used a mix of zucchini and yellow summer squash.

    This is my variation on "Grandma Dinner" served at my mom's house to her happy, hungry grandkids. It is homey, comforting fare... not gourmet, not too spicy, but quite satisfying when you're in the mood for a delicious ground beef casserole. Perfect with a hunk of crusty bread and a salad.

    This might not be for "everyone"...but we have found it curiously yummy for a week night meal without meat. If you love sweet potatoes and want to try them in a savory mix of black beans, rice and cumin...then come on! If you want a richer sauce, add 1 T. butter to the orange juice mixture.     Need a simple casserole sure to please the kids? I served this to friends who later left for Kenya...their girls were pining for it overseas, and you can bet I served it to them again when they returned to the States for a visit! (Talk about easy to please!) Nothing gourmet here, just yummy and great with salad and crispy garlic bread. (Recipe via my sister, who says she got it from Southern Living way back when...)
