    Delicious, easy and filling lasagna which is actually good for you too. A perfect comfort food and easy to freeze and save for a time when you can't be bothered cooking. I found this recipe on the internet and modified it to make it tastier and as low fat as possible.

    Delicious and easy dish. Good for people who like lasagne but trying to cut back on carbs. If you have a George Foreman grill (or similar) grill eggplant slices for a few minutes or until tender. You can also buy already sliced and grilled eggplant to make it easier. I use a grill for the eggplant and lite sour cream with great results.

    A simple curry. So quick to make and uses ingredients which don't cost a lot. I ate this last night by itself, but you could serve with rice for a complete meal. I use mild curry powder as that is my preference, you can make it as spicy as you like.

    Delicious and easy vegetarian recipe. I char-grill fresh sliced eggplant using my George Foreman grill, but you can buy it ready made from the deli. I also find it easier sometimes to omit the thyme leaves and lemon rind and use instead a bottled dried mix of lemon, basil and thyme from the supermarket.

    The muffins are so moist and yummy, and virtually fat free. Due to the low fat content they only stay fresh for a day or two, the best way to keep them (if they last that long!) is in the freezer and defrost as neccessary. They are fantastic warm!

    I made this cake for my wedding and received so many compliments. It was quite simple to make -- I made one cake two days before the wedding, two the day before and I iced it on my wedding morning! No one could believe I had done it myself, it looked and tasted so good. I actually made 4 cakes and the same quantity of icing worked. As I made the cakes at separate times, I only used one cake tin. We had 100 guests and there was still cake left over, although we had a dessert as well. I used Cointreu (orange liqueur) instead of Grand Marnier. Ingredients for cake are for one cake, so will need to be multiplied by how many cakes you are going to make. The frosting is for three cakes (or more even).
