My mother got this recipe when she lived in California and it became a great family favorite. It's really sort of a combination burrito and enchilada.............she always served it with mashed potatoes. It's great leftover, too. We did try freezing them but that didn't work very well........the corn tortillas weren't the same. Recipe can be doubled or tripled.
This is a recipe my mother made when we were kids. I don't know how old it is or where it came from. Delicious, comfort food with beans, bacon, brown sugar and tomatoes. I have also made this with canned beans.......use 4 or 5 cans beans, rinsed and drained instead. We always serve this with cornbread. I have put in the amount of brown sugar I usually use but you can either add more or less, depending on your personal taste.
I can't remember where I got this recipe but the whole family loves it. It has great enchilada flavor but is not too spicy. The sour cream topping is a perfect compliment to the beef. One time I forgot to cover the dish when i baked it and it still turned out great.
This is my version of a recipe I saw Giada make on her show. She puts bread crumbs between the zucchini layers but I think they taste soggy so I just put them on top. I sometimes just use an Italian shredded cheese blend as a substitute for the cheeses.
this is a big family favorite my mother would make. she just called it goulash and i wasn't until i started reading cookbooks i realized how unusual it was, it's not really hungarian but more tex-mex style. delicious.
