    The almond extract in this cake sets it apart from other basic white cakes; the texture is dense. If you prefer a less dense cake you can add 1/4-1/2 cup milk extra, and if you are not an almond person you can add less extract or even switch the extract to ie.lemon extract. It tastes wonderful as a layer cake with some fresh strawberries. The denseness of the cake makes it ideal for making cake shapes/designs - my friend served it up as a cute bunny.     This cake is another outstanding recipe from Food & Drink, LCBO magazine in Canada. AND it is a health concious recipe as well. The magazine notes that it could be served for breakfast as well. It works great in muffins, too. You can omit the cranberries - or sub with raisin etc - If you are not a fan of cranberries, but they really do add a certain something. You can add 1 tsp of vinegar to regular milk and let it sit for 5 min if you do not have buttermilk.

    Seriously - if you love peanut butter and chocolate these cookes are a MUST try. Imagine a wonderful chewy chocolate cookie with a creamy peanut butter filling - it is as good as it sounds. The recipe is from Toronto Star. We made them today and they will be on our cookie tray for years to come - for sure! The recipe mentions that the cookie does well with a 15 second reheat in the microwave on day 3. I don't think we will get to try that in this household.
