Nothing can whisk me away faster to a tropical isle than the combination of pineapple and coconut. One sip and I am transported to turquoise seas and cloudless aqua skies, lying on a hammock under shady palm trees with just a hint of a tropical breeze. This wonderful cocktail recipe originally came from bon appetit. Containing a few changes to make it a bit easier, I have eliminated 2 coconuts and making simple syrup. Coconut water is easy to find in your grocery store. The blue agave nectar is used in exact amounts to sub for the simple syrup. I hope you will enjoy this cocktail. Cheers

This is the recipe Chef Roberto Martin developed for Ellen Degeneres. Ellen being a native of New Orleans has always loved Red Beans and Rice. When she became a vegan it was quite an accomplishment for Roberto to develop this outstanding vegan alternative for the traditional recipe. He suggests using organic beans, broth made from "Better Than Bouillon" Vegetable Base and "Field Roast" Apple, and "Field Roast" Italian Sausage. I have made this recipe several times now and it is always outstanding. You will not miss the meat.....or the fat. Delicious, made healthy? You bet!

Be Not Afraid! Using whole wheat is not only healthy, it can taste good, too! I used Coconut milk in this recipe not only to add flavor, but add nutrition as well. Coconut milk provides 50% more calcium than cow's milk and has less calories (look in your grocer's dairy case for coconut milk). The combination of the coconut milk and banana, you will feel like you made a trip to the tropics for breakfast! Use real maple syrup for the best results. I hope you will enjoy this recipe!

This is a fabulous recipe to help use some of those beautifully ripe tomatoes in your garden. If you use extra large tomatoes you may want to add in a little more (sausage, bread and/or cheese) when making the filling. Using a homegrown tomato with a lot of flavor just makes this recipe. I like to use large cupcake baking cup liners to help hold the tomato upright on the pan. I hope you will enjoy this recipe as much as we have!

I made this recipe from Southern Living for Christmas and everyone just loved it! The recipe makes two 9 inch cheesecakes so it feeds a lot of people. This three layered cheesecake has a rich brownie bottom layer with a center layer of cream cheese and a decadently rich chocolate glaze covering the top. The recipe is easily halved. The Chocolate Glaze top layer is intended to divide between the two cheesecakes. However, I used one full recipe to top one cheesecake. Allow 8 hours chilling time. This cheesecake is absolutely delicious and I am sure you will enjoy it, too!
