    A great way to enjoy one sadly overlooked vegetable. The Eggplant. Add your favorite protein for a great one dish meal! This is my version of my friend Mayumi's recipe. I prefer the long and thin Japanese or Chinese eggplant. They taste less acidic.

    A tomato based chicken stew. Serve with rice for an easy, healthy meal. It's really delicious and almost hard to stop eating! Because my father wouldn't eat this, it was served only when he was out of town. I've updated it with fresh mushrooms, in lieu of canned, better curry mixes, and serve it with basmati or jasmine brown rice. Add zucchini, broccoli or cauliflower for added health. Hope you enjoy it as much as I have over the years. It's one of my comfort foods.

    These are a lovely cake-cookie, with a deep chocolate flavor. We made these as a holiday cookie growing up, with a simple powdered sugar frosting. I don't make them often, simply because I will eat too many at once. Hope you enjoy. You may use all butter in lieu of shortening, but I wouldn't recommend using all shortening or margarine. Powdered baking chocolate works fine, too. Be sure to read the conversion chart on the packaging.

    A tasty cheese lasagna that comes out surprisingly light. Don't leave out the pesto; it's wonderful with the tomato sauce. Because we eat a lot of pasta at home, I usually have homemade sauce and pesto on hand, but packaged will work great here, too. Any finely shredded vegetables can replace the zucchini, such as eggplant, carrots, spinach or mushrooms. Freezes well.

    I don't really like eggplant, but I loved this curry. I couldn't get enough of it, and two hours after eating a heaping bowl, I went back for what little was left over, and ate that. It's comfort food, and so soulful. Maybe it has something to do with the butter everything is sautéed in? This is adapted from a Bon Appetit article, and the directions are long, BUT once you get going, it's not hard to do. I used a curry mix that I like by Sadaf brands; use your favorite or make one from scratch! Enjoy!

    A delicious marinated bean salad, served chilled. Great in the summer as a side, or a vegetarian main dish. Add some whole grain penne or elbows, tomato slices and avocado, too. Use canned beans for convenience, if you like, but make sure your beans are cooked, first. The list of beans are my favorites; pick yours, but don't leave out the edamame.

    This pie crust is a pat in crust, but tastes flaky and delicious in spite of being a lazy version. From my Great Grandmother Mabel Larson's recipe.     A great brunch dish for a crowd. This doubles easily, and it's even better the next day. Not for those easily frightened by calories, but it's a little better with veggie "sausage". Also keeps it kosher! The pepper jack cheese is what makes it so great.
